Chocolate Pastor Delight

Yields 1 cake

Ingredients

  • Cake:
    • 2 cups all-purpose flour
    • 2 cups sugar
    • ¼ teaspoon salt
    • 1 stick butter
    • ½ cup vegetable oil
    • 1 cup water
    • ¼ cup cocoa powder
    • 2 eggs
    • ½ cup buttermilk
    • 1 teaspoon baking soda
    • 1 teaspoon vanilla extract
  • Icing:
    • 1 pound powdered sugar
    • 1 teaspoon vanilla extract
    • 6 tablespoons milk
    • 1 stick butter
    • ¼ cup cocoa powder

Directions

  • Cake:
    1. Combine sugar, flour, and salt in large mixing bowl. In small bowl combine butter, oil, water, and cocoa. Using a microwave, bring to a boil. Pour over flour mixture. Mix at medium speed until completely mixed. Add buttermilk and eggs. Add baking soda and vanilla extract. Mix well.
    2. Pour into a floured/greased pan.
    3. Bake at 350F for 25 to 30 minutes.
  • Icing: 4. Combine sugar and vanilla extract in a bowl. Combine butter, milk, and cocoa powder in a microwave-safe dish and bring to a boil. Add hot cocoa mixture to sugar and beat completely.
