Remoulade Sauce

Yields 1 cup

Ingredients

  • ¾ cup mayonnaise
  • 1½ tablespoons cornichon; finely chopped, or
  • 1½ tablespoons dill relish; finely chopped
  • 1 teaspoon capers; finely chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon spicy brown mustard
  • 2 teaspoons fresh parsley; chopped
  • ¼ teaspoon tarragon; dried, optional
  • hot sauce; to taste
  • salt; to taste

Directions

  1. Combine all ingredients, and season to taste with salt and hot sauce.
  2. Cover and refrigerate until serving time.
