Roasted Asparagus and Tomatoes

Ingredients

  • olive oil
  • 1 pound asparagus; trimmed
  • ½ cup cherry tomatoes
  • ⅓ cup shallots; sliced
  • 1½ teaspoons fresh thyme; chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Directions

  1. Preheat oven to 400F
  2. Combine all ingredients except olive oil on a jelly-roll pan. Coat lightly with olive oil mist.
  3. Bake at 400F for 6 minutes or until crisp-tender
