Chicken Amandine

Ingredients
- 1 (2.25 ounce package sliced almonds (⅓ cup)
- 2 tablespoon butter- melted
- 4 skinless, boneless chicken breast halves
- 3 tablespoon plain all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground pepper
- ½ cup dry white wine (or apple cider vinegar)
Directions
- Saute almonds in butter in skillet over medium heat for about 4 minutes or until lightly browned. Remove almonds with slotted spoon, reserving butter in skillet. Set almonds aside.
- Place chicken between plastic wrap to pound with mallet or rolling pin.
- Combine flour, salt and pepper. Dredge chicken in flour mixture. Brown chicken in reserved butter over medium heat. (may need to add more butter before adding the chicken-will need the pan to be covered with butter-not deep though)
- Stir in wine, cover, reduce heat simmer 15 minutes or until chicken is done
- remove chicken to platter and sprinkle almonds over the top
