Chicken Amandine

Ingredients

  • 1 (2.25 ounce package sliced almonds (⅓ cup)
  • 2 tablespoon butter- melted
  • 4 skinless, boneless chicken breast halves
  • 3 tablespoon plain all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • ½ cup dry white wine (or apple cider vinegar)

Directions

  1. Saute almonds in butter in skillet over medium heat for about 4 minutes or until lightly browned. Remove almonds with slotted spoon, reserving butter in skillet. Set almonds aside.
  2. Place chicken between plastic wrap to pound with mallet or rolling pin.
  3. Combine flour, salt and pepper. Dredge chicken in flour mixture. Brown chicken in reserved butter over medium heat. (may need to add more butter before adding the chicken-will need the pan to be covered with butter-not deep though)
  4. Stir in wine, cover, reduce heat simmer 15 minutes or until chicken is done
  5. remove chicken to platter and sprinkle almonds over the top
