Bouillabaisse

Ingredients ###-

  • 1 large onion, coursely chopped
  • 2 cloves garlic, chopped
  • 1/4 cup butter
  • 2 tablespoon all-purpose flour
  • 2 cups water
  • 1 cup chopped tomatoes
  • 1 8 ounce can tomato sauce
  • 1/2 cup white wine
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper
  • 1/4 dried thyme
  • 1/8 teaspoon ground allspice
  • pinch of ground saffron (threads)
  • 1 pound medium size shrimp
  • 1 pound fish (this can be any fish you like- red fish, tuna, salmon etc)
  • 1 12 ounce can oysters (if you like)
  • toasted French bread slices

Directions

  1. Saute onion and garlic in butter. Add flour, stir until smooth.
  2. add wine, cook for a couple of minutes
  3. Add other 8 ingredients
  4. Bring to a boil, lower heat and simmer for 30 minutes
  5. Add peeled shrimp, other chopped fish, etc. Simmer for 5 minutes or until shrimp and fish are done.
  6. Discard bay leaf
  7. Serve each portion with toasted french bread slices
